The Grilling Pen

Grilling has probably existed since man first discovered fire. There is evidence that charcoal has existed at least 30,000 years. Grilling was first a cooking tool during camping trips but as people moved into the suburbs in the 1950s and 1960s people wanted a way to bring the char broiled flavor into their homes. George Stephens is credited with inventing the precursor to the modern grill converting a harbor buoy into the kettle. Briquettes were invented by Kingsford a cousin of Henry Ford who wanted to recycle waste wood from the auto factories.
Charcoal is made of various woods and sawdust mixed together to form briquettes. We have chosen to represent grilling by the woods used in smoking. Hickory is probably the most commonly used wood for smoking meat. It is known as the king of smoking wood. Other woods commonly used are apple which imparts a fruity and sweet flavor to food, maple which gives a pleasant mild flavor, oak which is a strong taste and mesquite which imparts a southwestern flavor.
